Lying to the south-west of the town of Chablis, this fine 1er Cru produces arguably the most floral and graceful style of wine from the slopes of the appellation. This is exemplary in its typicity, floral on the nose, rose petal and jasmine. This wine from three different locations; Olivier explains the two in Secher give the cuvée its wonderful florality and the third in Roncieres with its 95-year-old vines give the depth and complexity. An absolute beauty.

An overtly floral-suffused nose reflects notes of sea breeze, zest confit and a whiff of white pepper. There is notably better refinement if not necessarily better density to the beautifully textured medium-bodied flavors that possess even better depth on the lightly austere, structured and lingering finale. While it should repay a decade or so of keeping, it should also be reasonably approachable after only 4 to 5 years. Drink 2030+

Plenty of ripe sunny fruit here. Crisp acidity, lovely purity, one for relatively early drinking. Salty edge to finish. From six plots spread across Vaillons, harvested at separate times. Fermented individually, blended in August, then aged for several months. To be bottled at the end of 2023. Drink 2024-2028

Pale lemon with a fresh lime touch. Wood has been used on the Séchets component. This is lean and tight up front then much more body behind, plenty of flesh here without losing the essential stony qualities, and finishing dry, despite the weight of fruit. Drink from 2026-2032.

This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Chablis
Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
