    This south-westerly facing vineyard with stony white clay soil produces wines with robust, full fruit flavours for the long term. The wine’s power and depth are additionally enhanced by the fact that these vines are 80 years old, having been planted in 1935! A wine with real substance, it enters the mouth with a feeling of elegance and then explodes with flavours of Cornish ice cream and brioche. A wine with huge potential.

    A pungently complex nose is composed of petrol, citrus, white flower, pear and sea shore elements. The subtly mineral and highly complex flavors possess a highly beguiling texture before culminating in a strikingly long finish that is Zen-like in its harmony.     Bright, pale yellow. Peachy fruit salad on the nose. Plush and very ripe but quite closed today, showing a creaminess of texture and a faintly phenolic quality but only moderate detail and nuance. Comes across as almost exotic following the Montée de Tonnerre. "This wine needs some oxygenation from old barrels," noted Bernard Hervet. (barrel sample)

This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
