The estate has lots of small parcels scattered across this premier cru that make up an impressive 3 hectares in total, and give a quintessential expression of this wonderful left bank vineyard. Vaillons has a high proportion of white clay in its soils, and its wines are often distinguished by their delicate floral notes. The 2017’s initial white flower delicacy leads to some excellent substance on the palate. This combination is the result of vineyard character and vintage quality working in harmony.

The 2017 Chablis Les Vaillons 1er Cru is bright, precise and wonderfully lifted. Bright floral notes, orchard fruit, lemon confit and mint are some of the many notes that grace this exquisite Chablis from Billaud-Simon. In this tasting, the 2017 stands out for its aromatic intensity, nuance and class. This is such a pretty wine. Drink 2020-2027

Here too there is a background trace of wood setting off the overtly floral and spicy aromas of algae, sea breeze and green apple. The highly seductive flavors possess a caressing mouth feel while delivering average depth but fine length on the bitter lemon-inflected finish. In short, this is pretty but not deep. Drink: 2023+

Notes of lemongrass, lime and white flowers mingle in an as yet unformed bouquet, introducing the 2017 Chablis 1er Cru Les Vaillons, a bright, elegantly glossy wine with a medium-bodied, well-defined palate, concluding with good length on the finish. Again, this was quite tight-knit and primary when I tasted it, but it's promising.

This includes a component of old vines from Sécher which might in future years be separated out. Fine pale colour, very backward nose, even with a touch of reduction. Still on lees unracked. Lovely tension through the middle but there is no shortage of fruit either. Excellent persistence. 4 stars.

This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Chablis
Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
