Nicolas Rossignol is the fifth generation in his family of wine growers in Volnay and part of the dynamic generation who took on their family estates during the 1990s. Having started small with just 3 hectares, he has carefully built his domaine up to 17 hectares covering some of the most exceptional vineyards in Beaune, Pommard, Savigny Lès Beaune and Volnay. Nicolas’s winemaking is always adaptable, making the most of his modern winery on the outskirts of Beaune. He remains broad-minded on the question of destalking vs whole bunch vinification. He likes his wines to develop slowly in cask, to bring out greater aromatic complexity and contribute to strengthening a wine.

This blend of four different plots - Les Buttes, Les Grand Champs, Les Famines and Les Lurets - from vineyards aged between 10-60 years old, produces a very complete example of the appellation. Brilliant purple colour, very expressive with blueberry and huckleberry flavours. A sweet purity of fruit, with fine powder-like tannins and a stylish finish.

Clos des Angles is a warm vineyard sitting beneath Clos des Duc. Sufficiently confident in the quality of the stems, Nicolas whole bunch fermented 15% of the fruit, creating a very floral style. Alpine fruits mixed with cherry and red currant. Sweet and luscious, generously textured, with broad layered tannins. Very good length and depth.

Nicolas has two different vineyard plots in this fine Premier Cru. The younger 20-year-old parcel borders Volnay and the older 70-year-old parcel lies beside Meursault. He describes it as a Volnay with Côte de Nuits DNA. A delicious succulence of rich pulpy fruit, sloes and wild stewed fruits. Fleshy and rounded tannins, with a refined delicate Pinot twist at the end. Extremely expressive.

Due to the size of the crop in 2021, Nicolas was left with little option but to blend four different Premiers Crus - Chanlins, Argillières, Jarollières and Chaponnières - into a single cuvée. Wild bramble and crumble aromas. This has stuffing and richness, an excellent volume of dark wild savoury fruits. The tannins are broad and mouth-filling and the lasting impression is of rich, spicy substance.

Very deep dark currant aromatics, with a touch of cranberry. Very clear and precise, with a striking crunchy fruit character and rewarding freshness. Pinot Noir purity at its best.

This vineyard lies at the foot of Les Caillerets, but its soil composition is quite different; more clay and pebbles result in a fuller, broader style of Volnay. A deep and intense wine, dark cherry, hints of black forest, pepper and spice. The firmer clay soil contributes to the muscle and feeling of direct power. The tannins sit tightly underneath, breathing freshness and energy into such an excellent wine.

This is my pick of the Rossignols. It is more expressive and textural than the others and is precisely what I look for in elite Volnay. The tannins are fresh and clean, and the potential is clear. Medium-weight, nicely detailed, and with a long finish, you will be rewarded if you can wait for it to unfurl fully.

From the lower slopes of Pommard, heading towards Beaune, this is an iron rich soil and these 40-year-old vines create an extremely intense and concentrated wine. Very direct with its dark fruit flavours, sweet cassis and olallieberry. The tannins are tensile and firm, this will require bottle ageing, but the potential is huge. Excellent quality.
