    The limestone soil in this vineyard typically produces wine with a mineral nuance: something smoky and violet-scented in its aroma. Even in a dimly lit cellar, you can see the vibrant cherry colour of the young wine. The domaine’s new basket presses have transformed not only the character of tannin structure achieved, but they have also been excellent for colour and brilliance, owner Claude de Nicolay explains. This wine seems so together already, with a harmonious cohesion between fruit, tannin, acidity, and body.

    The 2017 Savigny-lès-Beaune Les Lavières 1er Cru, already in bottle, has a vibrant, spicy, rose petal and violet bouquet that is even more intense than the Aux Fournaux. The chalk/limestone terroir really shows through here. The palate is medium-bodied with supple tannin. It does not quite have the charm and crystalline quality of the Aux Fournaux, but is more masculine and structured, with a lovely marine element tincturing the dark berry fruit toward the chalky finish.     There is a hint of barnyard character to the earth and sauvage-inflected dark berry fruit aromas. The attractively intense medium weight flavors exude a subtle minerality on the sneaky long finish where the barnyard character does not reemerge so my rating offers the benefit of the doubt that it will not become more pronounced with time.     The 2017 Savigny-lès-Beaune 1er Cru Les Lavières exhibits aromas of juicy cherries, rose petal, currant leaf, rich soil and warm spices, followed by a medium to full-bodied, satiny and succulent palate, with melting tannins, juicy fruit and a sapid finish. The domaine's old vines in this superbly situated premier cru have put in a very strong showing this year, and like the Savigny AOC, this was already in bottle when I tasted it. Drink 2019-2035

Domaine Chandon de Briailles

The sibling team at this stunning domaine (Francois and Claude de Nicolay) is most definitely a winning one. Their biggest influence has been to convert the estate firstly to organic and now to biodynamic methods of viticulture and vinification. The wines focus on sensual flavours and refinement, these are not powerful, but the aged vines allow for wines of extraordinary texture and complexity.

Savigny-lès-Beaune

The picturesque village of Savigny-lès-Beaune, just to the north of Beaune, is a relatively prolific producer in Burgundian terms. Less serious than its neighbours, Pommard and Volnay, these are nonethless delicious wines - perfumed, delicate and elegant. A tiny amount of white is produced.
