65 year old vines combined with the authority of a grand cru site result in a wine that is evidently powerful and yet still quite closed in its extreme youth. It shows that classic Chablis trait of crushed oyster shells. Raised exclusively in stainless steel, the fruit is compact and tense, poised for a long future of development as it slowly unfurls.

The 2016 Chablis Les Preuses Grand Cru has a tightly wound bouquet with just a subtle reduction, but one can still gauge the citrus fruit underneath, and hints of white peach and dried apricot. The palate is well balanced with impressive depth. It is not the most precise Les Preuses on the block, though there is satisfying length and a pleasant tang of spice on the aftertaste. One to watch.

Tank sample. A little more spice and oatmeal on the nose here than on the Mont de Milieu, more sign of oak, but not overdone. Seems to have a little less fruit concentration than the Mont de Milieu. It's a little leaner but still very long. Fabulous mouth-watering finish. Drink 2020-2028 (JH)

After a slight dip in (vintage-related) quality in 2015, this excellent Grand Cru bottling is back on form in 2016. Saline, focused and well balanced, with understated oak, this is driven by fruit purity, minerality and tangy, lemon grass and grapefruit notes. Needs more time in bottle. 2020-28

This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Chablis
Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
