    The 2016 Chablis Butteaux 1er Cru is much more closed and broody than its sibling Premier Crus at the moment: earthy, almost mulch-like aromas developing in the glass. The palate is well balanced and quite saline on the entry, hints of blackcurrant developing in the glass with disarming poise and grace towards the finish. Give this Butteaux a couple of years in bottle at least because the aromatics will require time.

One of the greatest producers in Chablis, the Raveneau wines are always racy and mineral, and their quality exquisite. These wines are known for the ageworthiness, and with low yields from just 8 ha, they are rare treasures. This is a world-class domaine of tremendous consistency. Today François’ two sons, Bernard and Jean-Marie, run the domaine with help from Bernard’s daughter, Isabelle. Grands Crus include Les Clos, Blanchots, Valmus; 1ers Crus include Vaillons, Butteaux, Montée de Tonnerre, Forêt and Monts-Mains.

Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
