Tasting Notes

Goedhuis, November 2015
A particular favourite of mine, a fresh and full style. This wine is vinified 50% in oak and 50% in stainless steel, and balances clean white peach flavours with hints of hazelnuts and Guernsey cream. Beautifully concentrated with a soft harmonious freshness and driven zest which lifts the palate at the end.

Burghound, October 2016,
Score: 94A pungently expressive and highly complex nose is composed of petrol, citrus, white flower, pear and sea shore elements. The subtly mineral and highly complex flavors possess a highly beguiling texture before culminating in a strikingly long finish that is Zen-like in its harmony. This borderline painfully intense offering is a notably special effort that is worth the trouble to find. Drink 2024+

Stephen Tanzer, August 2015,
Score: 90-92(from the oldest vineyard of the domain; aged 50% in stainless steel and 50% in old barrels): Bright, pale yellow. Peachy fruit salad on the nose. Plush and very ripe but quite closed today, showing a creaminess of texture and a faintly phenolic quality but only moderate detail and nuance. Comes across as almost exotic following the Montée de Tonnerre. "This wine needs some oxygenation from old barrels," noted Bernard Hervet.

Domaine Billaud-Simon

The Billaud-Simon name is long-established in Chablis, dating back to 1815 when Charles-Louis-Noël Billaud purchased his first vineyards. The estate remained in family ownership for 200 years until Erwan Faiveley purchased Billaud-Simon for Joseph Faiveley in 2015. This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Olivier seeks to make wines with true appellational authenticity. Oak is kept to minimal levels, only used judiciously, allowing the natural fruit content to express itself to a maximum.
Region
Chablis
Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
