    An extremely ripe nose combines spiced plum, floral, mineral and prune notes that lead toattractively textured, suave, supple and utterly delicious medium-bodied flavors blessed with seemingly endless reserves of extract that buffer the firm tannic spine on the long and serious finish. I very much like the underlying sense of tension and this should be most impressive in 10 to 15 years. Note that this is not a classic Caillerets as it’s exceptionally ripe. Drink: 2021+.Comments: sweet spot outstanding!

The sibling team at this stunning domaine (Francois and Claude de Nicolay) is most definitely a winning one. Their biggest influence has been to convert the estate firstly to organic and now to biodynamic methods of viticulture and vinification. The wines focus on sensual flavours and refinement, these are not powerful, but the aged vines allow for wines of extraordinary texture and complexity.

Volnay

A red wine appellation only, wines from Volnay might be considered the most revered of southern Burgundy. They have been celebrated since the 18th century for their delicacy. But they are not fruit forward like those of Beaune or Chorey Lès Beaune nor have the brooding structure of Pommard.Instead, they have superb linearity, focus and poise while sheathed in velvety tannin. This slightly reticent personality comes out even more with a bit of age, though some can be approached very young. There are no grand cru vineyards in Volnay, but there are some excellent premier cru examples including Volnay Les Champans and Volnay Les Caillerets. Chardonnay grown in the shared Santenots vineyard must be labelled as Meursault.
