    The 1989 Pichon-Baron repeats its performance from the vertical tasting in May 2018. It storms from the glass, bearing copious blackberry, cedar and perhaps a little more mint than I noticed on the previous bottle. There is so much youthful zeal to this harmonious, refined Pauillac that you would barely guess it is 30 years old. Long and tender with a graphite-infused finish, this bottle might be even better than the ex-château example. Tasted at the 1989 Bordeaux dinner at Hatched in Londo

    he 1989 Pichon-Baron remains a magnificent wine after almost 30 years. The bouquet is intense: aromas of blackberry, cedar, and a touch of bacon fat and mint storm from the glass and gain intensity with aeration. The harmonious, medium-bodied palate delivers fine tannin, a perfect bead of acidity and gentle grip in the mouth. The ample black fruit is laced with graphite toward the finish, and the aftertaste is sustained. This is the first bona fide great Pichon-Baron of the modern era. Tasted at the Pichon-Baron vertical at the château.

    Both the 1989 and 1990 vintages exhibit opaque, dense purple colors that suggest massive wines of considerable extraction and richness. The dense, full-bodied 1989 is brilliantly made with huge, smoky, chocolatey, cassis aromas intermingled with scents of toasty oak. Well-layered, with a sweet inner-core of fruit, this awesomely endowed, backward, tannic, prodigious 1989 needs another 5-6 years of cellaring; it should last for three decades or more. It is unquestionably a great Pichon-Longueville-Baron. Drink 2002-2027

Along with Pichon Lalande, this estate was only one of two Pauillacs to be classified as a secondgrowth in 1855. They have rivalled each other ever since. However, Pichon Baron has remained inthe shadow of its more illustrious neighbour often enabling it to provide good value for money.

Pauillac

Due south of St Estèphe lies the appellation of Pauillac, the king of Left Bank communes. It is home to three first growths as well as a plethora of other classified growths. Pauillac's renowned well-draining, gravelly soils enable its dominant grape Cabernet Sauvignon to reach fantastic heights of complexity and concentration. As a result, Pauilac's wines tend to be full-bodied with compact tannins and good freshness. Its aromatics are often what one associates with classic Bordeaux: pencil shavings, black currant and occasional mint. Some of the most famous châteaux of the commune are Latour, Mouton Rothschild, Lafite Rothschild, Pichon Baron, Pichon Lalande and Lynch Bages.
