    A favourite of mine in the Billaud-Simon stable, this wine sees no oak at all and is a highly accomplished portrayal of this fine grand cru terroir. With aromas of pears, peaches and blossom, this is pure nectar made in a wonderfully joyous style. Fragrant, balanced, bright and alive.

    The 2018 Chablis Les Preuses Grand Cru is bright, intensely mineral and light on its feet. In 2018, the Preuses is especially airy, with a real sense of refinement coursing through its veins. White flowers, crushed rocks, white pepper, grapefruit and vibrant saline notes confer energy as the 2018 builds into an explosive, mineral finish. This is super, super promising.

    Here too the nose is difficult and dominated by sulfur elements. More interesting are the racy and almost painfully intense flavors that don't have the size, weight and power of the Les Clos but are notably finer and offering outstanding persistence on the citrusy and bone dry finale. This too will require at least 5 to 7 years of patience and should amply reward 10+. Don't miss! Drink: 2029+

    The Faiveley family's 0.4ha parcel of Les Preuses was planted in 1949 and is among the domaine's older blocks. Pale, fresh and refined, this was mostly stainless steel fermented, with just 10% seeing wood. Aniseed and lemon peel aromas lead you into a palate that combines stone fruit and lime flavours with a dusting of baking spices. Drinking Window 2021 - 2028

    This is Olivier Bailly’s favourite so he likes to finish with Les Preuses. He finds it has everything from the start, whereas Les Clos can be austere. Also the vines are 70 years old here. All in tank though there might be a passage in wood later. This is pure and precise despite the evident volume of fruit behind. Not a rich Preuses but a very complete one with an excellent finish. Bravo!

This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Region

Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
