The Billaud-Simon name is long-established in Chablis, dating back to 1815 when Charles-Louis-Noël Billaud purchased his first vineyards. The estate remained in family ownership for 200 years until Erwan Faiveley purchased Billaud-Simon for Joseph Faiveley in 2015. This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings.

    Shining bright lime colour, with a strikingly pure minerality and aromatic characters of slate and washed-up seashells. On the palate this lovely wine has bright citrus notes and fresh salinity, encased by attractively rich flavours of white stone fruits. Clean, long and pure.

    A slightly cooler and quite pretty nose speaks mostly of citrus and quinine along with whiffs of iodine. The delicious and more vibrant medium weight flavors possess both good delineation and minerality while offering a more appealing texture on the bone-dry but not really austere finish. This is a very good villages and worth considering. Outstanding Top value. Drink 2024+

    Superbly delicious and inviting and ready to go, too. This is a lovely style and a wine that embraces the vintage’s ripeness, but manages to add a discreet degree of bite on the finish. A success.

    Lying to the south-west of the town of Chablis, this fine 1er Cru produces arguably the most floral and graceful style of wine from the slopes of the appellation. Its appeal is often in its youth, and this is a beautiful example, elegant and perfumed with hints of chamomile, and clementine. Gentle whilst possessing poise and length.

    Here too there is just enough wood present to bear mentioning on the more floral and spicier aromas of citrus blossom and mineral reduction. The delicious and almost painfully intense flavors are beautifully well-detailed while possessing a lovely texture on the sneaky long, saline and refreshing finish. Drink 2026+

    From a selection of parcels in Sécher, Chatains, Roncières and Mélinots. Harvested separately and fermented before blending. Bright, very zippy, lemon acidity, crisp, floral, and with nice weight. 50% oak but very subtle, with winemaker Olivier Bailly using 600-litre casks of at least five years’ age for the maturation of Sécher.

    Beautifully accurate and every inch a Vaillons, this is another stylish wine with masses of silky fruit and a keen acidic finish that manages to fit neatly into the chassis of flavour. Lovely.

    A very noble 1er Cru on the easterly side of the town. Its initial perfume and scent of lemon sorbet belies a wine which has confidence and power. There is tremendous volume, with a fine viscous texture. The lasting burst of ripe red grapefruit refreshes the palate and provides a wonderful persistence on the finish.

    There is a suggestion of the exotic to the aromas of white peach, passion fruit, quinine and citrus confit scents. The super-sleek and gorgeously textured medium-bodied flavors brim with dry extract on the round and caressing but quite punchy, clean and refreshingly dry finale. This too is going to require at least some restraint. Drink 2028+

    Most of the cuvée is produced from Samuel's own vines and 20% is matured in demi-muid of 450-600 litres. Lime and orange zest notes on the palate; a premier cru with very good concentration. Due to be bottled in January 2022.

    A little more subtle and closed than Les Vaillons, this is a quieter wine but it makes up for this lack of action with a longer and more controlled finish. This is a style for those drinkers who still appreciate the beauty of the elegance of Chablis.
