Tasting Notes
-
Burghound, September 2014,
Score: 93This offers up buckets of Chablis character with its pure aromas of mineral reduction, citrus rind, green fruit and pretty floral scents. There is excellent intensity and real punch to the splendidly detailed medium weight plus flavors that deliver seriously impressive depth on the explosive and bone dry finish. This is almost painfully intense yet there is virtually no austerity and overall, this is quite simply terrific in particular because it’s so poised. 93/2022+
Producer
Domaine William Fèvre

Attachment to the value of the terroir has allowed the William Fèvre Domaine to establish an exceptional estate by acquiring some of the best Chablis vineyards. With its 47 hectares, of which more than half are in Chablis Premier Cru (12 hectares) and Grand Cru (15.2 hectares), William Fèvre owns the widest array of Grands Crus and benefits from ideal conditions to produce excellent Chablis. Located on "historical" terroirs, dating from before the extension of the vineyard areas that occurred in the 1970's, the William Fèvre Domaine is at the very heart of the vineyards, on soil that mixes marl and clay-rich lime, as well as a Kimmeridgian subsoil rich in minerals and oyster fossils that give Chablis its unique mineral character.
Region
Chablis
Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
