- Tender, leesy and fresh, this delicious 2008 offers a plump palate with zesty citrus, oyster shell and a tangy finish. This could be the best Petit Chablis we've ever had and could easily pass for a Chablis. Highly recommended.

- Billaud-Simon's classy, concentrated chablis have popped up often in The Top 100 but this is the first time a petit chablis from this estate has knocked out its similarly labelled competitors. Petit chablis is just what it says it is: a kindergarten chablis made from chardonnay grapes grown in outlying vineyards, and some producers also pop in the grapes from young vines not yet entitled to the full appellation. Billaud Simon's tasty version delivers some classic lively, leafy, lemony, floral fruit. Jane Macquitty.
Chablis
Chablis is world famous for its white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
Domaine Billaud-Simon
Billaud-Simon is one of the great domaines of Chablis which dates from 1815 following the Napoleonic wars. Today, it is run by Bernard Billaud-Simon and his nephew Samuel. They have 20 hectares of exceptional vineyard sites including 5 premier crus and 4 grands crus. Most of their wines are vinified and aged in stainless steel in order to express their unique terroir and purity; however, several of their top cuvées are fermented in seasoned oak demi-muids (600 L) or barrels (228 L) to add gentle roundness and depth. Their goal is to produce wines which are mineral and racy, and which offer immense freshness even in the richest of vintages.
Chardonnay
Undoubtedly the world's most popular white wine grape, Chardonnay is most famous for creating the majority of white Burgundies. It is known for taking on the personality of the climate and soil as well as the style in which it is made. This versatility enables it to wear many masks including still wines from all over the world to sparkling wines in Champagne. It creates crisp, clean, mineral-driven wines in Chablis, exemplary, sumptuous wines in the Cote de Beaune, and palate-filling fruit-bombs, both oaked and otherwise, throughout the New World.
