    The Pinson’s 64-year-old Montmains vines, adjoin their parcel of La Forêt, and produce a fleshier style of wine than their neighbours, thanks to the mix of clay and chalk-based soils according to Charlène Pinson. With aromatics of honeysuckle, quince and medlar, this is broader in style than many for the vintage, balancing creamy fruit sensations with a thirst-quenching salinity. Always a favourite of ours and a lovely cuvée in 2021.

    Spicy and floral nuances add breadth to the green apple, iodine and white pepper aromas. The more refined if less powerful flavors exude evident minerality on the markedly, even aggressively, citrus-inflected and bone-dry finale that it shaped by bright acidity. At present I suspect that the citrus character might be too much for some though I would expect it to slowly mitigate. Drink 2028+

    Light snow with the frost on the left bank was bad news. Very lively bouquet, a little lemony reduction. Plenty of energy here, a light iodine touch, just the right volume of fruit and the oak is well integrated. Promising in its persistence. Drink from 2025-2030.

They like to use oak barrels for maturation, although the influence of new oak is only ever a gentle whisper in the background of their steely wines. Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
