Planted at the historical pre phyloxerra density of 30,000 vines per hectare by Olivier in 2000 in his search to compare viticultural influences with his ancestors of the 19th century. This very rare cuvee pale straw in colour has smoky oak and fresh hazelnut aromas. In the palate it is full of lemon zest and youthful citrus fruit. Extraordinarily intense, there is a great density of weighted fruit whilst remaining crisp and alive throughout. 2025 – 2034

Saint Aubin
Due west of Puligny and Chassagne lies the little, picturesque village of St. Aubin. With the neighbouring village of Gamay, it produces 2/3 white wine and 1/3 red wine over 230 hectares of vines of which over 3/4 are premier cru. It was one of the last appellations created in only 1970 but has since created an excellent reputation for good value well made Burgundy that can replicatePuligny. Some of the most expressive vineyards are En Remilly and Les Murgers des Dents de Chien.
